Zucchini bread

Time: 1.5 hrs

Yield: 1 medium loaf



AP flour: 200g

Cinnamon: 1 tsp

Cardamom: 1/4 tsp

Nutmeg: 1/4 tsp

Salt: 4g (1/2 tsp)

Baking soda: 1/2 tsp

Baking powder: 1/2 tsp

Discard: 180g

Vegetable oil: 120g

Granulated sugar: 150g

Brown sugar: 50g

Egg: 50g (1 large egg)

Vanilla extract: 1 tsp

Shredded zucchini: 1 cup (1 medium zucchini)

Semi-sweet chocolate chips: 1/2 - 3/4 cup

  1. Preheat the oven to 350F. Line your medium-sized loaf pan with parchment paper.

  2. Shred the zucchini in a food processor. Set aside.

  3. Mix together flour, spices, salt, baking soda, baking powder. Set aside.

  4. Mix together sugars, vegetable oil, discard, egg, vanilla extract. Fold in the zucchini and chocolate chips. DO NOT OVERMIX.

  5. Pour batter into loaf pan.

  6. Bake for 55-60 min, or until toothpick comes out of center clean. Enjoy!
