Cornbread














Time: 1 hr

Yield: 1 8x8 loaf

Ingredients:

Cornmeal: 120g

AP Flour: 62.5g

Discard: 125g

Baking powder: 1 tsp

Baking soda: 0.5 tsp

Salt: pinch

Melted butter: 113g, 1 stick

Brown sugar: 67g

Honey: 30g

Large egg: 1

Buttermilk: 177.5g


  1. Preheat the oven to 425F (you'll reduce to 400F once you put batter in). Prepare your pan.

  2. Combine cornmeal, AP flour, baking powder, baking soda, salt in a large bowl. Set aside.

  3. Combine melted butter, sugar, and honey together. Mix. Then add the egg and discard. Mix. Finally, add the buttermilk and whisk together.

  4. Pour wet ingredients into dry ingredients, whisking to mix as you pour wet ingredients in. DO NOT OVERMIX.

  5. Pour into prepared 8x8 pan and transfer to oven. Reduce oven temp to 400F. Bake for 20 min or until center comes out clean.
