Chocolate pumpkin bread

Time: 1.5 hrs
Yield: One medium loaf
Ap flour: 210g
Baking soda: 1 tsp
Cinnamon: 2 tsp
Nutmeg: 1/2 tsp
Cardamom: 1/4 tsp
Cloves: 1/4 tsp
Ginger: 1/4 tsp
Salt: 4g (3/4 tsp)
Melted butter: 113g (1 stick)
Gran sugar: 100g
Brown sugar: 80g
Eggs: 100g (2 large)
Discard: 120g
Pumpkin puree: 275g
Apple cider vinegar: 1.5 tsp
Chocolate chips: enough to sprinkle on top, or ~100g to mix in batter
Walnuts: enough to sprinkle on top
Granulated sugar: to sprinkle on top
Preheat oven to 350F
Prepare loaf pan with parchment paper.
Mix flour, baking soda, spices, salt together. Set aside.
Melt butter, set aside.
In a large bowl, mix gran sugars, brown sugar and eggs. Make sure bowl is large enough to hold the flour, as you will mix the dry ingredients in later.
Mix in discard and pumpkin puree.
Mix in melted butter. Finally, mix in apple cider vinegar.
Add dry mix (flours, spices, etc) to wet mix in thirds. Stir until incorporated before adding more. DO NOT OVERMIX - it's ok if batter is lumpy.
Pour mix into loaf pan. Sprinkle chocolate chips, walnuts (or nuts of choice) on top.
Dust with brown or granulated sugar (this helps w browning).
Bake at 350 for 55-60 min, or until toothpick comes out clean from the middle.
