Banana streusel muffins

Ingredients:


  • AP flour: 200g

  • Cinnamon: 1 tsp

  • Cardamom: 1/4 tsp

  • Nutmeg: 1/4 tsp

  • Salt: 4g

  • Baking soda: 1 tsp

  • Discard: 180g

  • Bananas: 2 very ripe, mashed

  • Vegetable oil: 113g

  • Gran sugar: 75g

  • Brown sugar: 75g

  • Egg: 100g (2 large)

  • Vanilla extract: 1 tsp


Streusel ingredients:


  • Brown sugar: 75g

  • AP flour: 2 tbsp

  • Cinnamon: 1/4 tsp

  • Butter: 1 tbsp, broken up

  • *Chopped walnuts/pecans: 1 tbsp, if preferred


  1. Preheat oven to 350F. Prep the muffin tin by greasing it.

  2. Make the streusel by combining all ingredients together, Make sure butter is broken up well and evenly distributed.

  3. Combine AP flour, baking soda, salt, spices together. Mix well, set aside.

  4. Mash two bananas. Combine with eggs, sugar, vanilla extract, butter. Add discard. Mix.

  5. Add dry ingredients to wet ingredients, one third at a time.

  6. Sprinkle streusel on top. Bake for 20 min, or until toothpick comes out of center muffin clean.
