Banana bread

Time: 1 hr
Yield: 1 medium loaf
Ingredients:
AP flour: 200g
Cinnamon: 1 tsp
Cardamom: 1/4 tsp
Nutmeg: 1/4 tsp
Salt: 4g
Baking soda: 1 tsp
Discard: 180g
Bananas: 2 very ripe, mashed
Vegetable oil: 113g
Gran sugar: 75g
Brown sugar: 75g
Egg: 100g (2 large)
Vanilla extract: 1 tsp
Toppings:
Semi sweet chocolate chips
Chopped walnuts
Preheat oven to 350F. Prep the loaf tin with parchment paper.
Combine AP flour, baking soda, salt, spices together. Mix well, set aside.
Mash two bananas. Combine with eggs, sugar, vanilla extract, butter. Add discard. Mix.
Add dry ingredients to wet ingredients, one third at a time.
Pour batter into prepped loaf tin. Sprinkle toppings on, if preferred.
Bake for 55 min, or until toothpick comes out clean from middle
