Banana bread

Yield: 1 medium loaf


  • AP flour: 200g

  • Cinnamon: 1 tsp

  • Cardamom: 1/4 tsp

  • Nutmeg: 1/4 tsp

  • Salt: 4g

  • Baking soda: 1 tsp

  • Discard: 180g

  • Bananas: 2 very ripe, mashed

  • Vegetable oil: 113g

  • Gran sugar: 75g

  • Brown sugar: 75g

  • Egg: 100g (2 large)

  • Vanilla extract: 1 tsp


  • Semi sweet chocolate chips

  • Chopped walnuts

  1. Preheat oven to 350F. Prep the loaf tin with parchment paper.

  2. Combine AP flour, baking soda, salt, spices together. Mix well, set aside.

  3. Mash two bananas. Combine with eggs, sugar, vanilla extract, butter. Add discard. Mix.

  4. Add dry ingredients to wet ingredients, one third at a time.

  5. Pour batter into prepped loaf tin. Sprinkle toppings on, if preferred.

  6. Bake for 45 min, check if toothpick comes out clean from middle. If it does, take out of oven. If not, bake for ~5m OR until toothpick comes out clean.
